Description
This sparkling wine comes from twin vineyards on the east coast of New Zealand’s North Island. Chardonnay from Gisborne is blended with Pinot Noir from Martinborough. Picked Early with an acid structure akin to the classic wines of Champagne, but delivered with no sulphites and left sur lie in bottle to continue to take the gift of yeast as it ages in bottle. Fresh green apple and quince flavours have been nuanced with the brioche like notes of the yeast. Expect this wine to slowly become more supple and richer with extended bottle aging.
