Winemaking: The barren plains of the Plan de Dieu (God’s Plain) have a winemaking heritage dating back to the fourteenth century. Deep pebble beds result in rich and powerfully flavoured wines. Organically grown fruit is hand harvested before a traditional vinification using small open fermenters and maturation in two to three year old large format oak for nine months. Bottled without fining and minimal addition of sulphides.
