APPELLATION: IGP Côtes de Thongue
TERROIR: white clay-limestone soils, brown volcanic soils and Villafranchian pebbles (small rolled pebbles).
GRAPES: 65% Grenache, 25% Cabernet Sauvignon, 10% Syrah
VINIFICATION: each grape variety and terroir are vinified separately. The grapes are destemmed before a very short maceration or direct pressing. Then, the musts are cold clarified before fermenting between 15° and 18°C. The wines (from different grape varieties and terroirs) are blended and then aged in stainless steel and concrete vats. They are bottled in winter and spring.
TASTING NOTES: pale color. Nose of small red fruits and citrus fruits. A palate full of finesse, balanced, combining roundness and liveliness. It is a wine of pleasure, elegant and fresh. Drink young.
SERVE: serve chilled as an aperitif. At the table with grilled fish (mullet, sea bass, etc.), sushi, grilled meat, salads.
