Huia Sauvignon Blanc shows a good aromatic intensity with bright floral note of elderflower and lime blossom. The wine is layered with flavours ranging from guava, melon, gooseberry and lime zest.
Because a small percentage of the wine was aged in a little neutral oak, it has the complexity and softness to be a delicious match with food.
Seafood like fresh oysters, prawns, scallops, steamed mussels and marinated fish are a given but this little juicy number is a hit with seasonal asparagus and a wide variety of cheeses.
The grapes were gently pressed and the juice settled.
A 30% portion was fermented in neutral French oak.
The wine was fermented using an organic non-GMO
certified yeast, alongside naturally occurring wild
yeasts present in the winery.
The wine was not fined before bottling.
