Description
Lemon, lime, melon and flint. A savoury, dry wine with a crunchy, chalky texture and flavours of granny smith apples, stones and toast.
Only 1583 bottles produced.
Winemaking Notes:
Chardonnay – 100% – Clone 15 and 121
Handpicked fruit was whole bunch pressed direct to 500L puncheons with full solids. 15% of which was new French oak.
After a few days, wild fermentation spontaneously started and progressed for 15 days with a maximum temperature of 25 deg C.
Post fermentation the wine was stirred a few times and left to mature at cool temperatures. This helps to build the mid palate and to tame the fruit characters. No malolactic fermentation occurred and minimal sulphur was added after 3 months. After a total of 9 months of barrel maturation the wine was racked to tank for bottling. No fining or filtration.
