APPELLATION: Chablis 1er Cru
GRAPE VARIETY: Chardonnay
GROUND AND BASEMENT: Kimmeridgian clay-limestone.
LOCATION AND EXPOSURE: On the left bank of the Serein commune of Chablis. South-east exposure.
AVERAGE AGE OF PLOTS: 25 years.
WINEMAKING: Cold static settling before starting fermentation. Alcoholic and malolactic fermentations in barrels and vats.
BREEDING: Duration approximately 12 months on fine lees, in vats and barrels.
Gold color, shiny with golden reflections.
The first nose is expressive and fruity (fresh fruits: peach, apple).
After opening, some floral (honeysuckle) and woody, vanilla notes are added.
The palate is fresh with a nice liveliness on attack. We find the fruity side again but this time more tangy (lemon, pineapple).
Beautiful power on the palate with lots of length and a nice minerality.
The finish is slightly woody with notes of grilled dried fruits.
Dense and aromatic wine.
Food and wine pairings: Aperitif, queen-style appetizers, prawn plancha, cheese (goat type).
