DESCRIPTION
Tasting Note: Harvested 9th March 2021. Ripe with flavours tending towards the sour citrus spectrum. The grapes were gently pressed and the juice allowed to ferment to dryness with indigenous yeast, in small stainless steel tanks. Remained on lees through winter, the wine was then racked and allowed to settle in tank with a light filtration prior to bottling February 2022. Miniscule yield. Absolute laser-like purity. Plenty of substance. Finishes dry and so clean, in such a good way.
