“Takahiro Koyama is one of North Canterbury’s winemaking stars and his new brand, Taka K, launched this year with two excellent Pinot Noirs: this wine and another called Pearson, which comes from a small vineyard site. Tasting Note: Very soft, rounded tannin, with lots of aroma. Very easy to approach. The colour is light ruby going to pink hue. The aroma of pink cherry and red stone fruits. Aged in French Oak barrels for 10 months. Coarse filtration prior to barrel aging but no fining or filtration after fermentation.
Winemaking Notes: The grapes were sourced from Organically farmed vineyard (not certified yet, transaction period now) in eastern side of Waipara Valley, North Canterbury. The Vineyard has clay rich soil with some limestone influence. Vertical Shoot Positioned Trellis is used to train vines. Harvested grapes were fermented in open top fermenters with wild yeast. After the fermentation, aged in French Oak barrels (no new oak) for about 10 months, racked and blend into Stainless steel tank prior to the bottling without any fining or filtration.
