Vibrant with flavours of cherry and fresh mint, this wine shows delicate tannins and a bright fruit has driven palate with hints of vanilla and coconut. Slow ripening was encouraged by the cool nights of Eden Valley and handcrafting in the winery have brought out exceptional flavour without adding preservatives. Fermentation was conducted in two separate parcels adding complexity to the final wine.
WINEMAKING
Both Pinot batches were cool fermented, with pump overs two to three times a day to extract the soft tannins and delicate flavours. Inoculated with MLF and pressed out a few days after sitting on skins for optimum balance. The wines were settled overnight before racking into a combination of French Oak and allowed to mature prior to bottling.
