VITICULTURE/WINEMAKING NOTES / Pinot Noir and Pinot Gris grapes are sourced from an organic gravel soil vineyard in North Canterbury. The fruit is destemmed and co-fermented with native yeast. After a few weeks, the wine is pressed off the skins into Spanish amphora (Tinajas) for ageing. Bottled unfined, and unfiltered.
