Macallan Harmony Collection Fine Cacao is a concept that came from Casa Cacao, a boutique chocolate workshop founded by Jordi Roca, dessert chef at Spain’s three-Michelin star “El Celler de Can Roca” and Macallan’s longtime partner.
Polly Logan, a Macallan whisky maker, has travelled to Spain on a deep flavour tour to discover a whole new world of cocoa. According to Logan, “Macallan Harmony Collection Fine Cacao exemplifies the best combination of Sherry Barrel whisky and chocolate.” It was matured in specially selected European sherry barrels and American white oak sherry barrels that have imparted rich aromas of dried fruits, sweet honey, melting chocolate and subtle oak.
