The fruit was handpicked and pressed off into seasoned barrels and one stainless tank. The stainless tank was fermented cool on light lees- the barrel component was ambient, wild and on full solids.
After a months the two parcels were blended and retuned to barrels prior to bottling.
The style is bone dry but full of texture, red cherry sweet herbs and orange blossum .
