Bannockburn

The Billet Doux is a preservative free wine made with fruit from the Cairnmuir Vineyard. Each year a small parcel of Pinot Noir is identified as appropriate for producing this wine.Made in tiny quantities, it is hand bottled with a cork closure.

Schist based alluvial loess soils, 30 meters deep.
100% Pinot Noir from own rooted vines, planted 1998.
Biodynamic principles, practiced from 2011.
Organic certification to European Union equivalence.
All fruit hand-picked and destemmed.
Aged for 11 months in French oak.
Zero additions.
Bottled Marc no added Sulphur. 13.8% alc/Vol.
