Riesling that’s been bottled before the primary fermentation finished. No added sulphur, unfined and unfiltered. A technically tricky process involving stopping the initial tank fermentation part before completion by chilling, holding the wine for a couple of weeks to settle out some of the lees before bottling it and allowing the fermentation to complete in bottle. The result is a broad, textural sparkling wine that’s more vinous than fruity with ginger-like lees, apricot blossom and a suggestion of mineral character. An unusual and appealing wine. The best Pet Nat I can recall tasting.
