Louis Michel & Fils Chablis Premier Cru Vaillons
Vaillons, Roncières, Mélinots… These small climats in the Valvan valley are blended together to produce the Premier Cru known as Vaillons.
Terrior
Kimmeridgian. Left bank. South-east exposure.
Hard limestone in a fairly strong clay base. Deep, well-drained soil with a reddish-brown colour.
Very warm vineyard sheltered from the wind. Fairly gentle slopes.
Years planted: 1969 / 1976 / 1984
Vinification
No added yeasts, long fermentation using indigenous yeasts in temperature-controlled tanks.
Spontaneous malolactic fermentation.
Matured for 18 to 20 months only in stainless steel tanks with as little intervention as possible. Moderate cold stabilisation.
Fined with bentonite if necessary.
Lightly filtered once just before bottling.
Tasting
Serve at between 12 and 14°C. Swirl the glass before tasting to allow the wine to breathe.
Varied aromas of roasted hazelnut, white-fleshed fruit, sweet spice and blond tobacco notes.
A delicious Premier Cru that creates a warming sensation in the mouth.
