Tasting Note: Bright and bubbly, this wine is a lot of fun. Ripe red fruits mixed with candy floss and a little spice. Intense and bright in the mouth with flavours of dark cherries and new season strawberries. Lively acid and an off-dry finish. A taste of summer! Our Pinot Noir is grown in central Hawkes Bay on hillsides made up of loess (wind blown sediments) over crumbly limestone.
Winemaking Notes: 100% carbonic maceration for 5 days, before being whole bunch pressed to a stainless steel tanks. Fermented cold until being bottled straight from tank, before the ferment is finished. Fermentation was then completed in bottle, providing the bubble for our 1st Pet Nat. Pét–nat is an abbreviation for “pétillant naturel”—a French term that roughly translates to “naturally sparkling”.
