Organised Chaos Pinot Noir Pet-Nat

Tasting Note: Bright and bubbly, this wine is a lot of fun. Ripe red fruits mixed with candy floss and a little spice. Intense and bright in the mouth with flavours of dark cherries and new season strawberries. Lively acid and an off-dry finish. A taste of summer! Our Pinot Noir is grown in central Hawkes Bay on hillsides made up of loess (wind blown sediments) over crumbly limestone.

Winemaking Notes: 100% carbonic maceration for 5 days, before being whole bunch pressed to a stainless steel tanks. Fermented cold until being bottled straight from tank, before the ferment is finished. Fermentation was then completed in bottle, providing the bubble for our 1^st Pet Nat. Pét–nat is an abbreviation for “pétillant naturel”—a French term that roughly translates to “naturally sparkling”.
